What these infrared lamps actually do inside a steam oven

The power behind the performance
Here’s the core of it: these lamps are usually set up for 400V, the same power you’d find in industrial equipment. That gives you serious wattage in a small package. The tube length is made to fit standard oven cavities—often around 300mm—so it drops right into existing mounts. No fuss, no modifications. That short tube paired with high voltage concentrates the energy, giving you the heat density you need to crisp dough fast.
Built to survive the heat and the steam
The lamp uses a quartz envelope filled with halogen, which handles rapid heating and cooling without cracking under thermal shock. That matters when the oven keeps switching between steam and dry heat. The connector is R7s, a standard choice because it gives you a solid two-contact connection that can carry high current without getting hot. And that coating on the quartz? It’s not just for looks. It shields the element from moisture and chemical attack in that steamy environment, so the output stays consistent for thousands of hours.
How it feels when you’re actually baking
In a deck oven, the lamp sits above the deck and hits the dough with direct radiant heat. You get a crisp crust, while the steam keeps the inside soft. It’s designed as a drop-in replacement for most models, so you wire it up and run it. Just keep one thing in mind: this is a 400V, high-wattage lamp, so it packs serious heat in one spot. Your oven’s cooling and ventilation have to be up to the job. If airflow isn’t right, the socket and wiring can run hot.
