
How we cut pizza bake times from 5 minutes to 90 seconds
Most convection ovens are just big boxes of moving air. That’s fine, but it’s slow. If you want to speed things up, you have to stop relying on the air and start using direct radiant energy. That’s where clear quartz infrared (IR) heaters come in. By adding these to the mix, we managed to drop the bake cycle from 300 seconds all the way down to 90.
The secret is in the quartz
Here is the thing about clear quartz: it lets short-wave infrared radiation fly right through it. Other tubes are coated, which basically traps the heat to make the tube glow. Clear quartz doesn’t bother with that. The energy just hits the dough and toppings instantly. You aren’t sitting around waiting for the air in the oven to get hot; the heat is already there, hitting the pizza. This is how you get that perfect, charred crust without turning the middle of the pizza into a cracker.
The hardware (and the headaches)
These heaters are incredibly snappy. You can flick them on and off in milliseconds. When you pair them with a convection system, the IR does the heavy lifting on the searing while the fans just keep the general temperature steady. But it’s not all magic. There are a few things to watch out for. First, your power bill and your electrical panel. Pushing these heaters to the max to hit that 90-second mark draws a ton of current. If your wiring isn’t up to the task, you’re going to be tripping breakers all day. Then there’s the fragility. Clear quartz is basically glass. If your crew is a bit rough with the trays or bumps something, a tube can crack in a heartbeat.

It’s not just about the clock. It’s about space. When you can bake a pizza in 90 seconds, you can push way more product through a much smaller oven. You get a huge jump in your hourly output without having to buy more equipment or eat up more floor space.
